Beet Risotto Recipe

I love risotto! I could eat it every day and one of my favorites is beet risotto hands down.

My better half on the other hand doesn’t think a meat-less risotto can be a main dish – this resulting in this delicious goodie being paired with grilled chicken (matches up perfectly).

Beets Risotto With Grilled Chicken Recipe

What you need (serves about 4):

  • 2 cups rice (1/2 cup per person)
  • 4 beets (fresh or canned – the difference in taste is almost non existent)
  • 1 medium onion
  • 1/2 pound feta cheese (or similar salad cheese)
  • salt, pepper, oil, water

Chop the onion and beets (or preferably toss it into the food chopper aka life saviour and be done with it).

In a larger pan or pot heat up oil. Add chopped onions and saute until they are soft. Add beets, salt and pepper and cook for a while (a few minutes) occasionally stirring.

Add rice and water (add water if needed while it cooks) and cook as per rice instructions until it’s cooked and is tender (as I’ve seen those vary from 9 to 40 minutes – taste test probably the best option 😉 ) – when rice is half way cooked ad chopped feta cheese and stir occasionally so it melts evenly.

It’s a great main dish but goes well with chicken :). Green lettuce rounds it up quite nicely too!
